Our Story

A fusion of identities. A reverence for craft. A southern hospitality without compromise.

Jill and Wes, founders of JawBags
The Founders

Jill & Wes.

The name JawBags is the fusion of their identities — a private shorthand between partners, made public the night they opened their first dining room in Buckhead. Jill brings the room: the warmth, the rhythm, the detail. Wes brings the bar: precision, patience, and a librarian’s memory for what makes a drink sing.

Together they built JawBags as a sanctuary for the cut and the catch — a place where southern hospitality is not a brand promise but a baseline.

Head Chef

Drew.

A culinary virtuoso who masters the line with the calm of a surgeon. Whether you’re a fan of succulent filet, robust ribeye, or classic New York strip, Chef Drew ensures every steak is a masterpiece, grilled to your exact preference.

His seafood program transforms the daily catch into culinary revelations — buttery Alaskan king crab, succulent lobster tails, citrus-cured scallop. Freshness, always. Flavor, without exception.

“Every dish tells a story. Every bite is a revelation.”
— Chef Drew
Our Philosophy

Luxury should be felt, not seen.

JawBags is a dialogue between coast and heartland. We honor the catch, we honor the cut, and above all we honor the table. Impeccable service, attention to detail, and a room that holds you — that’s the promise.

Whether in the historic charm of Milledgeville, the energy of Atlanta, or the salt air of Mobile, your evening will be made yours.
